INTRO

We're excited to introduce a new coffee from Neel and Kavita Vohora in Tanzania — Edelweiss SL-28. This washed SL-28 offers a vibrant and refined cup, with tasting notes of yellow apple, hazelnut, and grape, complemented by a smooth, elegant mouthfeel. It's a coffee that beautifully reflects the care, precision, and dedication of the Vohora family. Edelweiss SL-28 is versatile and expressive, performing wonderfully as both filter and espresso.

THE PRODUCER

Edelweiss Coffee Farm is located in Oldeani, Karatu, on the rim of the Ngorongoro Crater. Since 1969, three generations of the Vohora family have carefully nurtured and expanded the farm, developing coffees of remarkable quality and character. The farms sit high on the edge of the world-renowned Ngorongoro Conservation Area, a UNESCO World Heritage Site. Bordering an indigenous forest, the land is shared with elephants, buffalo, lions, and smaller antelope. To protect this extraordinary ecosystem, large areas of bushland are preserved, and tree cover is maintained throughout the farms. The Vohora family is deeply committed to farming practices that minimise environmental impact whilst coexisting with the surrounding wildlife. All coffees are grown at altitudes between 1,600 and 1,850 metres, placing these farms amongst the highest in Tanzania. The coffee is entirely rain-fed.

THE PROCESS

The Washed process at Edelweiss involves careful handling:

🔧 De-Pulping — Mechanical removal of skin and mucilage
💧 Fermentation — Controlled wet fermentation
🚿 Washing — Thorough washing to remove remaining mucilage
☀️ Drying — Careful drying to optimal moisture content

This meticulous processing creates clean, vibrant coffees with elegant clarity.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

What does 'Filter' or 'Espresso' Roast mean?

Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Manhattan coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
